- Pound the chicken breasts with a meat mallet between two sheets of plastic wrap until they are an even thickness.
- Combine the flour, salt, black pepper, paprika, garlic powder, onion powder, thyme, basil, and oregano in a shallow dish.
- In a separate shallow dish, whisk together the egg and milk.
- Place the breadcrumbs in a third shallow dish.
- Each chicken breast should be dipped in the flour mixture, then the egg mixture, and finally in the breadcrumbs.
- In a large skillet over medium-high heat, heat the vegetable oil.
- Cook for 4-5 minutes per side, or until golden brown and cooked through, before adding the breaded chicken breasts.
- Toast the bread slices in a toaster or on a griddle while the chicken cooks.
- When the chicken is done, remove it from the skillet and place it on a plate lined with paper towels to rest for a few minutes.
- Place a slice of cheese on each piece of toast, followed by a chicken breast, and finally the remaining slice of toast.
- Serve the sandwiches immediately, cut in half.
