Avocado and Tomato Sandwich with Sweet Potato Fries Recipe

This avocado and tomato sandwich is a delicious, healthy, and quick lunch option. Sweet potato fries add a delicious crispy texture and are an excellent substitute for regular french fries.

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
  • Total Time: 45 minutes

Instructions

  • Preheat the oven to 425°F.
  • Peel and thinly slice sweet potatoes.
  • Combine cornstarch, smoked paprika, garlic powder, salt, and black pepper in a mixing bowl.
  • Toss in the sweet potatoes to coat evenly.
  • Spray a baking sheet with cooking spray and place the fries on it.
  • Bake for 25-30 minutes, until golden brown and crispy, flipping halfway through.
  • While the fries are baking, mash the avocado and slice the tomato in a bowl.
  • Toast the bread slices and spread two slices with mashed avocado.
  • Season with salt and pepper to taste after adding tomato slices.
  • To make sandwiches, top with the remaining bread slices.
  • Serve alongside sweet potato fries.
